Cinnamon French Toast

Ingredients

French Toast

  • 2 pieces sourdough

  • 2 large eggs

  • 1 tsp ground cinnamon

  • 2 weetbix (crushed)

  • 2 tbsp maple syrup (canadian)

  • 1/4 tsp vanilla extract

  • 1/4 cup almond milk

Poached Pears

  • 2 green pears

  • 500ml filtered water 

  • 1/4 cup maple syrup

  • 2 cinnamon quills

  • 1 tsp vanilla extract

Intructions

  1. In a shallow dish, whisk together the egg, milk, cinnamon, vanilla extract, and 1 tablespoon of maple syrup. In another shallow dish, combine the crushed Weet-Bix.

  2. Dip the slice of sourdough bread into the egg mixture, ensuring both sides are coated, then dredge the bread in the Weet-Bix mixture.

  3. Preheat a skillet or griddle over medium heat and lightly coat it with oil spray or butter. Place the coated bread onto the skillet and cook for 2-3 minutes, or until golden and crisp.

  4. Spray the uncooked side with a bit more oil, flip the bread, and cook for an additional 2 minutes.

  5. Serve the crumbed French toast warm, topped with poached pears and a drizzle of the remaining maple syrup. Optional: add reduced-fat yogurt for extra creaminess.
