Cinnamon French Toast

Ingredients
French Toast
2 pieces sourdough
2 large eggs
1 tsp ground cinnamon
2 weetbix (crushed)
2 tbsp maple syrup (canadian)
1/4 tsp vanilla extract
1/4 cup almond milk
Poached Pears
2 green pears
500ml filtered water
1/4 cup maple syrup
2 cinnamon quills
1 tsp vanilla extract
Intructions
In a shallow dish, whisk together the egg, milk, cinnamon, vanilla extract, and 1 tablespoon of maple syrup. In another shallow dish, combine the crushed Weet-Bix.
Dip the slice of sourdough bread into the egg mixture, ensuring both sides are coated, then dredge the bread in the Weet-Bix mixture.
Preheat a skillet or griddle over medium heat and lightly coat it with oil spray or butter. Place the coated bread onto the skillet and cook for 2-3 minutes, or until golden and crisp.
Spray the uncooked side with a bit more oil, flip the bread, and cook for an additional 2 minutes.
Serve the crumbed French toast warm, topped with poached pears and a drizzle of the remaining maple syrup. Optional: add reduced-fat yogurt for extra creaminess.
