Ingredients
French Toast
- 2 pieces sourdough 
- 2 large eggs 
- 1 tsp ground cinnamon 
- 2 weetbix (crushed) 
- 2 tbsp maple syrup (canadian) 
- 1/4 tsp vanilla extract 
- 1/4 cup almond milk 
Poached Pears
- 2 green pears 
- 500ml filtered water 
- 1/4 cup maple syrup 
- 2 cinnamon quills 
- 1 tsp vanilla extract 
Intructions
- In a shallow dish, whisk together the egg, milk, cinnamon, vanilla extract, and 1 tablespoon of maple syrup. In another shallow dish, combine the crushed Weet-Bix. 
- Dip the slice of sourdough bread into the egg mixture, ensuring both sides are coated, then dredge the bread in the Weet-Bix mixture. 
- Preheat a skillet or griddle over medium heat and lightly coat it with oil spray or butter. Place the coated bread onto the skillet and cook for 2-3 minutes, or until golden and crisp. 
- Spray the uncooked side with a bit more oil, flip the bread, and cook for an additional 2 minutes. 
- Serve the crumbed French toast warm, topped with poached pears and a drizzle of the remaining maple syrup. Optional: add reduced-fat yogurt for extra creaminess. - Enjoy your delicious crumbed French toast with poached pears!
