Ingredients

  • 1 cup scotch fingers

     

  • 1/3 cup butter (grass fed) or nuttelex

  • 1/2 cup granulated sugar

Filling

  • 1 cup non fat cream cheese (lactose free/vegan)

     

  • 2 cups protein yogurt (soy/chobani/yopro)

  • 2 large eggs

  • 3/4 fresh mango pulp

  • 2/3 cup granulated sugar

  • 1/4 cup white flour

  • 2 tsp vanilla extract

  • 1/2 tsp salt

Intructions

  1. Preheat the oven to 170C

  2. In a mixing bowl, add your crushed cookies, sweetener, and melted butter and whisk together until combined. Transfer into a greased 8-inch springform cake pan.

  4. Place the cheesecake in the oven and bake for 45-55 minutes, or until the middle is set.
  5. Remove the cheesecake from the oven and let it cool completely, before refrigerating for at least 4 hours, to firm up.
