Sausage Egg McMuffin

Simple breakfast, with high protein you do NOT want to pass up!

Ingredients

Sausage

  • 100g mince beef (or vegan mince)

  • 1 tsp smoked paprika

  • 1tsp ground cumin

  • 1 pinch salt

  • 1 egg

  • 1 english muffin

  • 1 slice 20% fat reduced cheese

Intructions

  1. In a bowl, combine the ground beef (vegan if using) , herbs and salt. Mix until just combined.

    Shape the mixture into one small patty, about 1-2 cm thick.

  2. Heat a pan over medium heat. Cook the beef patty for about 4-5 minutes on each side until browned and cooked through. Remove from the skillet and keep warm.

  3. Split the English muffin in half. In the same skillet, add a little butter and toast the muffin halves until golden brown, melt cheese on top.

  4. In the same pan, crack the egg. You can either fry it sunny-side up, over-easy, or scramble it. Season with salt and pepper to taste. If you want a perfectly round egg, you can use an egg ring or a small round cutter.

  5. Place the cooked patty on the bottom half of the toasted English muffin. Add the slice of cheese on top of the patty, followed by the cooked egg. Finally, place the other half of the muffin on top.
